Prep Time: 40-50 min. total
vegetable cooking spray
8 oz. ziti, uncooked (2 cups)
1 cup part-skim ricotta cheese
1 cup (4 oz.) shredded skim-milk Mozzarella cheese
2 cups meatless spaghetti sauce
1/4 cup finely chopped basil leaves (I substituted dried basil from a sub. chart)
1/2 tsp. garlic powder
1/4 tsp. pepper
1 Tbsp. grated Parmesan cheese
Instructions: Cook pasta according to package directions. Drain. Preheat oven to 375 degrees. Spray rectangle baking dish with cooking spray. In a large mixing bowl, combine ricotta cheese, 1/2 of the mozza cheese, and 1 cup of the sauce with basil, garlic powder, and pepper. Add in the pasta. Spoon this mixture into the casserole dish, then top by spreading the remaining sauce over and cover it with the remaining mozzarella cheese. Sprinkle Parmesan on the top. Cover and bake for approx. 20 minutes. Uncover and continue to back an additional 15 minutes.
Notes: We substituted dried basil from a substitution chart -- nowhere near a 1/4 cup of basil. Sprinkling basil to taste is my favorite lazy way of doing this.
